Hi all🙋🏻‍♀️,

How can a baker refrain herself from baking😉??? So after guacamole, here comes the avocado pound cake. Believe me the taste was super soothing and perfect crusty exterior and nom nom internally. Tried to google first but nowhere got to see the perfect smooth texture of this cake which pounds have traditionally. I just picked up my own recipe and this is the result🤗.

If you see my prior recipes of pound cakes.. nowhere have added baking powder cause eggs and mixing of butter and sugar were enough to give the raise. But in this recipe, I have added 1 tsp baking powder because the avocado is a sort of viscous liquid when you purée it. It might have restricted the cake to rise. Apparently you can see that making cake is a science or combination of mathematics and science. You have to run your mind when going through few recipes and also when replacing the ingredients.

So here is the recipe of avocado pound cake which yields around 500-600 gms of cake.


INGREDIENTS:

100 gms salted butter
1+1/4 cup powdered sugar
3 eggs
1+1/2 tsp vanilla essence
1/2 cup avocado purée
A very small drop of wilton leaf green colour
1 tsp baking powder
1+1/4 cup APF or refined flour
Butter for greasing

METHOD:

Preheat oven at 180° c and grease your cake tin with butter.
Mix sugar and butter till smooth and beat until fluffy. But please don’t start your mixer immediately. Otherwise your kitchen will be messed up with powdered sugar all around. Just mix with spatula and then run your hand mixer. It will take around 4-5 minutes.
Add eggs one at a time, beating well after each addition.
Add vanilla essence and avocado purée.
Now add flour in 2 additions beating well for a minute.


Batter will be very thick but it has to be. Don’t add any liquid to adjust the consistency.
Transfer the batter into your cake tin and tap on your work surface so that all the extra bubbles get off from the batter.


Bake at 180° c for 60 minutes or until cake is slightly brown from the top and your tester comes out clean from the centre.
Now after fully baked take it out from the oven and cool on the wire rack.

Note: If the cake becomes brown and still the baking is required, cover the top with aluminium foil or butter paper. Immediately browning will stop there but baking will be in process until done.
