BHOGER KHICHURI

Hi all🙋🏻‍♀️,

Yesterday I prepared prasad (bhog) for Maa Durga… her favourite bhog khichuri🙏🏻. This is Bengali delicacy and miss this so much now. I remember in my childhood, we all sisters used to wait to get this bhog. Volunteers from our nearest pandal would bring this on a wooden wagon and distribute to the whole para (society). It’s actually ambrosia for me.

This is simple khichri but with distinct flavour. Garam masala added into this makes it very special. Try it friends.. you’ll just love it.

Below mentioned recipe can be served to 4 persons as a meal and 20/25 persons as a prasad.

RECIPE:

INGREDIENTS:

2 cups moong dal… without skin

2 cups govind bhog rice.. as I don’t get authentic ones.. so I went with starchy and aromatic Indrayani rice

2 cups largely diced potatoes

2 cups large florets of cauliflower

1/2 cup green peas

1/2 cup clarified butter or ghee

3/4 bay leaves

1 tsp cumin seeds

3 medium sized chopped tomatoes

3 tbsp ginger paste

1 tsp green chilli paste

1 tsp kashmiri chilli powder

1 tsp cumin powder

1 tsp turmeric powder

1/2 cup grated coconut

3 tbsp sugar

2 tsp of Bengali garam masala powder.. just take 5 green cardamoms, 5 cloves, 5 black peppers, 3” cinnamon stick. Powder it in grinder. Use 2 tsp from the whole.

Salt as required

METHOD:

Firstly take a deepand dry roadt moong dal only until light brown. You can smell that nutty smell, when done. Don’t sauté it until dark brown. Transfer the roasted dal in a bowl. Add rice and wash them together till you get clean water. Soak them in water for 30 minutes.

Now add ghee in the same skillet and fry potatoes and cauliflower till light golden brown separately. Take them out and keep aside.

Add 2 tbsp ghee in that same pan and heat it. Add cumin seeds and bay leaves. Let it splutter. Add chopped tomatoes and 1/2 tsp salt. Cover and cook till tomatoes get mushy and raw smell goes off. Add grated coconut, ginger paste, chilli paste. Sauté for a minute. Add red chilli powder, turmeric powder and cumin powder. Mix well.

Add soaked rice and dal. Now stir fry the whole mix well for 3/4 minutes until all water evaporates. Add garam masala and water (as required for khichri). Add salt and green peas.  Stir well. Cover and cook till done. Add more hot water if required. When done add ghee as much you wish. Cover and switch off the flame.

Serve hot😋.

KEEP COOKING👍🏻
