Loved to relish CHEESE CRACKERS in my childhood.
Tried this in my kitchen though it’s different from those crackers but still very crispy and yum biscuits.
It’s very simple but delightful at every bite.
Let’s see the recipe which yields 12 biscuits.
RECIPE:
INGREDIENTS:
1 cup APF or maida
1/2 tbsp baking powder
125 gms salted butter
126 grated cheddar cheese
2 tbsp parmesan cheese
A pinch of red sweet paprika
1 tbsp lemon juice
Zest of 2 lemons
1 tbsp melted butter
METHOD:
Sieve maida and baking powder in a bowl. Add paprika and keep it aside.
In another bowl cut butter in cubes. Add flour mix and rub between your finger until crumbly.
Add cheese. Mix all well.
Now add lemon juice and knead dough until combined.
Roll into cylindrical shape and wrap in a foil. Refrigerate for an hour.
After an hour, preheat your oven at 180° c and line a baking tray with parchment paper.
Take the cookie roll out of the refrigerator and unwrap the foil.
Slice into 12 equal sized roundels and place them an inch apart on your baking tray. Mix the melted butter and lemon zest. Brush them on the top of your cookies.
Bake at 170° c for 15-20 minutes until very light golden edges.
Take the tray out and let them cool completely.
Store in an airtight container and bite between breaks.
