BOURBON AND CHOCOCHIP BISCUITS

Hi all🙋🏻,
Tomorrow is Monday and the weekday plans already been executed. Baked these bourbon and chocochip biscuits to add into my son’s short breaks throughout the week. It’s very easy recipe and excuse me for not being so perfect about the uniformal size of all the biscuits. Also didn’t use or prepare buttercream to sandwich the bourbons. Rather used nutella spread. Cheating cheating😉. But it tastes yum. Try and find it yourself 👍🏻.

So here is the recipe which will give you 12-13 individual bourbons or 5 sandwiched bourbons and 8 chocochip biscuits.

Let me clear this too.. for unsalted butter, I used my hands. Had fresh malai in refrigerator. Whipped it quickly as we do for clarified butter and used it. Far far better than amul which I used before for my cookies or biscuits.

Finally the recipe:

RECIPE:

1 cup APF, refined flour or maida

Pinch of salt

3 tbsp cocoa powder

1/2 tsp baking soda

4 tbsp soft brown sugar… still I grinded them into powder

1 tbsp golden syrup… have used Tate & Lyle… but you can use honey too

5 tbsp unsalted butter

1-2 tsp milk

METHOD:

Sieve APF, cocoa powder together in a large bowl.

Add salt, sugar and baking soda. Mix well.

Add golden syrup and butter. Mix well until mixture seems coarse.

Now add milk … 1 tsp at a time and mix until you get dough form mix. Maximum go for 2 tsp. This you can adjust.

Take a cling film. Wrap the dough and freeze for 15 minutes.

Preheat oven at 180° c for 10 minutes. Take a baking tray and spread some flour. You can spread baking paper before sprinkling flour too.

Take the dough out from the freezer and roll into about rough rectangle about 1/8″ thickness.

Shred the rough and broken parts out keeping the rolled dough of measurement 6″ into 5″.

Cut horizontally into 1″ strips. You’ll get 6 strips. Now cut vertically at 2.5″. But I got only 10 biscuits in all than 12😂. Be liberal.

Now pierce them with a toothpick and transfer them on the baking tray.

Bake for 10-12 minutes at 180°c.

Take the tray out and let them cool completely.

Now just roll the left dough and cut into equal pieces. Press some chocochips and bake at the same temperature for 10-12 minutes.

As the bourbons come to room temperature, sandwich them with nutella in between and enjoy your evening tea or milk.
