After piping flowers now is the turn to bake a cake.. itā€™s my husbandā€™s birthday cake. Both my twinny gems love butterscotch so went with the same flavour. After all itā€™s his dayšŸ„°.

Cake is very simple to make. I did all my calculations and voila.. ultimate sponge you can see I got.

I baked in 4 equal sized round cake pan. Yes.. I could have baked in one and sliced but baking such a thick layer in one .. loses all the moisture in it and hard crust you get.

Now if you donā€™t want to do icing, replace oil with 100 gms butter and initially mix butter and sugar together for 3 minutes. Then add 1 egg at a time .. in it all the wet ingredients followed with the recipe below.

RECIPE:

INGREDIENTS:

2 eggs

1 cup powdered sugar

1/4 cup unflavoured oil

1 tsp butterscotch essence

1/4 cup milk

1 tsp honey

1.5 cups all purpose flour or refined flour

1/2 tsp salt

1.5 tsp baking powder

1/4 tsp baking soda

METHOD:

Preheat oven at 180Ā° c for 10 minutes.

Grease 7ā€ round silicon mould with the same oil you have used for cake.

Sieve flour, salt and baking soda and powder in a bowl. Keep aside.

Take the bowl of stand mixer. Into it, add eggs and sugar. Whist at minimum till you get fluffy mixture.

Now in the same mixture add oil, essence, milk and honey. Mix well.

Now add your sieved dry mixture into this liquid in 3 batches. Whip all for 2 minutes to release the gluten and get that sponge.

Transfer the batter into greased moulds.

Bake at 180Ā° c for 15-18 minutes. No need to brown the top. Just take them out.. when done. Use skewer test to check the cake is done. If the skewer comes out clean, take the cakes out and let them cool completely.

Time for icing nowšŸ˜ƒ. Icing you can go with your different variations.
