Hi all,

Very well known focaccia to all of you☺️!!!!

It’s an Italian flat bread just like pizza base topped with few ingredients and herbs. Very delicious😋.

You can retop it with other added ingredients of your choice and availability while eating or just have it as it is with tea or simply applying some salted butter on top.

Recipe continues which can be served to 6-8 people.

RECIPE:

INGREDIENTS:

1 tsp honey

2 tsp instant yeast

1 cup warm water

1.5 tsp salt

2.5 cups APF or maida

5 tbsp olive oil.. Will be used in allocated portions

1 large julienned onion

6-7 cut in halves cherry tomatoes.. You can use normal ones too

Handful of rosemary

4-5 quartered olives

1/3 cup grated parmesan cheese

METHOD:

Take a large bowl. Add sieved flour and salt. Mix well and make a well too in the middle.

Add honey, yeast and warm water. Mix well. Now transfer the dough onto clean kitchen counter and knead until smooth and done. It just takes around 7-10 minutes.

Grease a bowl with 1 tbsp of oil and roll the dough all around so that it get greased from all sides and keep it covered and undisturbed for 2 hours for the first proofing until it gets double in volume.

As it gets doubled, grease a square baking tray with 20cm measurement. Transfer the proofed dough into that tray and press it with your fingers so that all the sides touch the edges neatly. Now by pressing with a finger make fingerpress marks on it. Keep it aside for an hour until it becomes puffy slightly.

By that time add 2 tbsp oil in a pan. Add onions and fry until soft and becomes pink.

Preheat oven at 220°C for 10 minutes.

Take the puffed up dough and arrange tomatoes, olives and rosemary in a row. Sprinkle caramelised onions and cheese. Drizzle the leftover oil.

Bake at 200° C for 20 minutes.

Let it cool completely. Cut and relish😋😋

    Oh my goodness!! That focaccia looks incredible 😊 I have never tried to make my own, only ever ordered as a starter, but you have inspired me!
