Literally hi after a long break. Was frustrated with the scorching heat of Pune. Not was in a mood to make anything🙄. But this was request from a friend of mine to cook…. Unfortunately couldn’t treat her but she wanted the recipe with treat for eyes too😄.

Makhana is very famous at my native place.. MITHILA. Actually my native place is famous for 3 famous things.. MEEN, MAKHAAN AND PAAN☺️ (fish, foxnut and betel). We make makhane ka kheer, caramelized makhana or sabji.

Let’s go for the recipe.. Which can be served to 7-8 persons at a time.

RECIPE:

INGREDIENTS:

200 gms paneer …. Cubed

2 cups makhana 

1 tsp ghee or clarified butter

1 carrot chopped or julienned 

1 capsicum chopped in cubes

3 tbsp khus khus or poppy seeds

7-8 almonds or cashews

1/2 cup milk

1 medium sized roughly chopped onion

1 large or 2 medium sized roughly chopped tomatoes 

1 tbsp cumin seeds

1.5″ roughly chopped ginger

2 green chillies

2 tbsp byedgi or kashmiri chilli powder

1+3 tbsp vegetable oil… I used rice bran oil

1/2 tsp turmeric powder

Salt

2 cups water for gravy. You can opt for 200 ml coconut milk + 1/2 cup water for gravy too… It will give rich and tastier gravy.

METHOD:

First of all soak khus khus, almonds in half cup milk for 4-5 hours.

Now after the khus khus and almonds have soaked up in milk, transfer them to the grinder jar. Add onion, tomato, ginger, green chilli and cumin seeds. Grind all well into fine paste. No need to add extra water.


Heat a pan. Add ghee and roast makhana for 3-4 minutes. Transfer them into a bowl.

In the same pan add 1 tbsp oil. Sauté capsicum and carrots until soft. Hardly for 4-5 minutes. Just cover and stir at regular intervals. Transfer them into makhana bowl.


Now add 3 tbsp oil in the same pan. Add turmeric powder. Let it get brown. Add masala paste and red chilli powder. Now fry this masala at minimum flame by covering and stirring at regular intervals until oil leaves on the sides.


Add fried makhana, veggies and cubed paneer. Stir all well.


Add water or coconut water mix for the gravy.

Add salt and cover the pan with lid. Cook at minimum flame for 7-8 minutes.

Serve with naan, puri, chappati, kulcha or jeera rice.
