1 cup All purpose flour, 1tbsp granulated sugar, 1 tsp baking powder (for vegans) or 1 egg (for non vegans), 1/2 tbsp lemon juice, 1/4 cup of milk, 4-5 drops of vanilla essence.
FOR MAPLE SYRUP:
1 tbsp granulated sugar, 2 tbsp brown sugar, 2 tbsp water, 1 tsp of heavy cream, 1/4 tsp maple or vanilla extract.
METHOD FOR PANCAKE:
Mix all the above ingredients of pancake and keep aside for 2 minutes.
It should be of pouring consistency just like cake batter. Heat a non stick pan and pour a ladle of pancake mix on tawa. At this point minimize the flame to sim. I made three pancakes out of this batter and so used steel ring to make all pancakes in even shape.
Let the bubbles be visible on top.
Now remove the ring and flip the cake to other side. Increase the flame to medium. Let it cook for 1 minute.
If you have doubt you can do the simple toothpick test. Insert and take it out. If it’s clean, the pancake is done. Repeat the same for remaining pancakes.
METHOD FOR MAPLE SYRUP:
Assemble all the ingredients in a saucepan except extract. Let it boil for 2 minutes.
You can feel the consistency for thick syrup by seeing it’s frothy bubble in pic given.
Switch off the flame and now add the extract of mapple or vanilla.
Now assemble the cake on a plate and pour 3-4 tbsp of maple syrup on top. Garnish some blueberries or raspberries on top. Enjoy 👍
