Hi all🙋🏻‍♀️,

We three don’t like potatoes but we lobeeee baby potatoes.. I think due to its intense natural flavour, texture and consistency. Never leave a chance if available at my sight.

This content is about Potato cajun.. BBQ style. First ever I tasted this at Barbecue Nation.. a very famous buffet server restaurant. Actually this is one of the veg starters accompanied with innumerable veg and non veg starters too. Fortunately once I asked the recipe in nutshell to the service boy. Unwillingly he named 3/4 ingredients.. rest I got it and voila.. even better cajun sauce I made.

For this recipe if you get baby potatoes, please go ahead with it.. otherwise go for very medium sized ones.

Cajun cooking is preferably referred as rustic cooking.. for the French. It is specifically referred as to prepare the dish with mere available ingredients in your pantry.

So now let me coach with the recipe which can be served to 2 persons.

RECIPE:

INGREDIENTS:

15 baby potatoes

1 tsp salt

oil for shallow fry

FOR THE BATTER:

3 tbsp cornflour

1 tsp maida or rice flour

2-3 pinches of salt

FOR THE CAJUN SPICE:

5 tbsp mayonnaise.. prefer plain one

2 tsp tomato sauce

1 tsp honey

2 tsp cream

1/2 tsp chilli flakes

1 tsp garlic powder or paste of 10 garlic cloves

1/2 tsp mixed herbs

1/2 tsp piri piri mix (optional)

1/4 tsp black pepper powder

1/2 tsp red chilli powder

1/3 cup milk.. can add 1-2 tsp more to make the sauce pourable

salt as per taste

FOR GARNISH:

1 tsp each of finely chopped coriander and onion

METHOD:

First give a whistle to your potatoes combined with salt if using small or give 2-3 if using medium.

Let the pressure release. Cool down the potatoes completely. Peel and keep them aside.

Prepare your sauce now. Take all the ingredients of sauce and combine well.

Now prepare the batter. Add all the ingredients of batter and mix water to make it slurry.

Time to shallow fry the potatoes. Take one potato and press between your palms until thin especially the sides. Dip into the batter and fry at medium high till golden and crunchy. Remember to keep the sides of potatoes thin and fry at low flame more. These 2 things will make your potatoes perfectly crunchy.

Now spread the fried potatoes on your serving dish. Pour the sauce and sprinkle the garnish. Tadaa..🤗 ready they are !!!!
