Hi all🙋🏻‍♀️,

This covid 19 and lockdown has taught so many things to us. Making soya chaap at home too🤣. Seriously was craving so much for this.. it’s one of my favourite starters.

Have thought to make soya sticks too at home.. at least once to explore this☺️. For this recipe, have used store bought sticks.. canned ones.

As the name depicts.. soya sticks are made from soya paste, APF or refined flour, etc.

This recipe can be served to 4/5 persons.

RECIPE:

INGREDIENTS:

8-9 Canned soya chaap sticks

20 cashews

4-5 whole byadgi or Kashmiri red chillies

2 green cardamoms

1 cup thick or hung curd

1/2 cup mallai

1 tbsp coriander powder

1 tsp ginger garlic paste

1 tsp chaat masala

1 tsp garam masala

1/2 tsp black pepper powder

juice of half lemon

1 tbsp each of pounded mint and coriander leaves

4 tsp each of clarified butter (ghee) or Butter

salt

1 large onion.. cut into julienned

METHOD:

First soak the canned soya chaap in water for 10 minutes.

Soak cashews, cardamoms and chillies in water for 30 minutes.

Now after 30 minutes, prepare the Fine paste of cashews and chillies together.

Take soya chaap out of water and cut into 1” chunks.

Prepare the marinade.. take all the ingredients in a deep bowl  from the list above including your cashew paste except soya chaap, butter and onion. Mix well until creamy. Add soya chunks and mix well till incorporated well. Cover and let it sit for 4/5 hours in refrigerator. You can opt for 2/3 hours too. More time for marination gives intense flavour.

Now as the marination is over, take all the chaap pieces out of the marinade by wiping the extra coating.

Add 2 tsp any of the butter you opted for in a skillet. Add the soya chunks and just roast until dark brown or grilled well. You can opt for oven too as will try next time. Surely will tell you the grilling technique and temperature both.

Now add the remaining butter in the same skillet. Add onions and sauté for a minute at maximum flame. It should be crunchy. Add grilled soya pieces and leftover marinade. Adjust seasoning here and cover and cook for 2-3 minutes.

I gave dhungar for teal resto aroma☺️.

Just take 4/5 pieces of coal and burn it on gas stove till it becomes 1/2 red. Place the coal in a small bowl. Make a space in the middle of the prepared soya chaap. Place the coal bowl in the middle. Pour a tsp of clarified butter on the coal and immediately cover it with foil completely. Let it sit for 10-15 minutes.
