BLUEBERRY ICE-CREAM

Season of berries…berries nd berries ☺️. Did some berry shopping and prepared the preserves for the whole year. Don’t wanna regret and get crazy when these berries won’t be around.

Made blueberry ice-cream for this weekend. 

  

Recipe follows below: 

INGREDIENTS:

FOR BASIC ICE-CREAM:

 1/2 lit full cream milk, 1 1/2 tbsp corn flour, 8 tbsp honey or sugar, 1 1/2 tbsp GMS powder(softener), 1/8th tsp Alginate(stabilizer).

FOR BLUEBERRY PRESERVE:

200gms blueberry, 4 tbsp sugar.

FOR BLUEBERRY ICE-CREAM:

1/2 cup blueberry preserve, 1/4 th cup fresh homemade cream, 1/2 lt basic ice-cream.

METHOD:

FOR BASIC ICE-CREAM:

   

 Take the cold milk in a saucepan. Add all the ingredients above till you get the smooth surface below of the saucepan. 

  

Now, put the saucepan on gas stove. Keep stirring otherwise lumps will form due to corn flour. Let it boil for 1 minute. 

  

Turn off the gas and keep on stirring for another 2-3 minutes. Set it aside to cool. 

  

After it comes to room temperature, put it in plastic or glass container and freeze for atleast 8-10 hrs. Your BASIC ICE-CREAM is ready!!!!!!!!

 NOTE: From this very basic raw ice cream recipe you canprepare any of the below given ice cream flavour accordingly.


FOR BLUEBERRY PRESERVE:

Forgot to take clicks…. But still you can make it. It’s very easy.

Take 200gms raw blueberries in a saucepan. Add 6 tbsp sugar. Boil and mash till it thickens. Set it aside to cool at room temperature. Then refrigerate till chilled.

NOTEFor cranberries, raspberries, black currant, blueberries or blackberries, you can make the simple pulp as prepared for strawberry pulp and can make out any flavour.

To use perennially, store the preserves in freezer section in an air-tight containers.


FOR BLUEBERRY ICE-CREAM:


  

   

Take the basic ice cream of 1/2 lit and cut it into small pieces, Add 1/4 cup of fresh cream, 5 tbsp heaped tbsp blueberry preserves and beat till it becomes creamy, fluffy and light-weight. I did this in 2 batches.

   

 

  
 

Pour it into the plastic container and freeze till it sets. On an average it takes about 4-6 hrs for any flavour to set. 

You can garnish with raw chopped blueberries or blueberry sauce.

Your ice-cream is ready. Kick off this summer with this chilled berry ice-cream 😍😊
