As far as I know cookies are called as BISCOTTI in Italy. Made this small batch of biscuits today with italian seasoning and butter too with added garlic and italian seasoning. This seasoning is easily available in the market. Infact we get in bulk with pizza at pizza counters. 

If you don’t have the butter with added garlic and seasoning, no worries 😊. Just add plain unsalted regular butter and use seasoning with it separately. 

  
RECIPE FOLLOWS:

This recipe yields 15 cookies

INGREDIENTS:

1 cup all purpose flour

2/3 cup corn or potato starch (can omit this and add this much of all purpose flour to the above mentioned flour)

110 gms seasoned butter ( if adding plain butter take the same quantity and add 2 tbsp of italian seasoning. I have used both the butters and added 1 tbsp of seasoning)

1 tbsp baking powder

2 tbsp red chilli flakes 

1 tbsp coarsely grounded black pepper 

METHOD:

Take butter in a bowl. Add pepper, chilli flakes, and seasoning. Whisk till fluffy. Atleast for 2-3 minutes.

 

  
 Add both the flours and baking powder. Just mix and combine. Don’t knead. Make a ball and wrap in a cling film. Freeze for 30 minutes.

Preheat oven at 180 degree celcius for 10 minutes.

Line a baking tray with parchment paper.

  

 

 

 

Take the dough out after 30 minutes. Make balls and press folk to give the pattern. Bake them for 10-12 minutes at 180 degree celcius. While baking do remember to check in between. Once the sides are little brown, take them out.

Once done, take them out and cool on wirerack completely. Transfer them to airtight containers.
