Don’t you think Christmas and baking .. both are so relevant to each other ☃️🎅🏻🧁🥧. So my first bake this Christmas 2020 are Friands or Financiers. These are actually oval shaped cupcakes … though you can bake in any mould as per your choice. Traditionally oval shape has been set for these cuties. You can see in pics that I have experimented with round and bundt moulds too as well as kept few in its signature shape.
They are very famous in New Zealand and Australia but you can bake them anywhere 😁. Ingredients are easily available and so you can enjoy these at any corner of the world.
For the very first time have baked these as have heard so much from one of my friends staying in Australia. Recipe is very easy and you can make this so quick as quickly I have drafted this recipe 😜.
This recipe yields 25-27 Friands of 30-35 gms each.
100 gms unsalted butter… unsalted is must
5 egg whites
1+1/2 cup confectioner’s sugar or sugar powder
1 cup+2 tbsp almond meal/flour
3/4 cup refined flour or APF
1/4 cup desiccated coconut
3/4 tsp baking powder
Few gojiberries and pumpkin seeds to garnish.. you can go with any options like berries as per your choice, choco chips, etc.
Grease your mould with butter and preheat oven at 180°C.
Melt butter in microwave and keep it aside.
Now sieve sugar powder in a deep bowl. Add almond meal, coconut, sieved APF and baking powder. Add egg whites and butter. Use hand mixer or stand mixer to combine well.
Now with a scoop fill your moulds till 2/3 of its capacity. Sprinkle your berries or garnish. Bake at the same temperature for 20 minutes till golden sides you can see. To check the doneness, go with cake testing method. If the tester comes out clean from the middle of your friand, it’s done. Baking time may vary, as per your OTG. So keep eyes on these beauties 👁👁.
Once done, take the bakes out and cool them on wire rack.
Ready to eat and serve too!!!!
