MERRY CHRISTMAS TO ALL OF YOU!!!!!

It’s December and so cakes and cookies in my kind☺️☺️

This is Non-boozy Christmas Cake with egg. Eggless version will be posted soon.

This recipe yields about 800 gms of plum cake but minimised or maximised lil bit of dried fruits and nuts will change the total weight of the cake.

INGREDIENTS:

FOR SOAKING AND ROASTING FRUITS:

1/4 cup dried mixed berries

2 tbsp raisins

4 tbsp goji berries

2 tbsp black currant ( you can replace mixed berries, rsisins and currants with tutty fruity )

1/2 cup chopped almonds, hazelnuts cashews and walnuts each

Few Pecans

2 tsp tea leaves

1 cup water

FOR CARAMEL SYRUP:

1/4 cup white granulated sugar

1 tsp + 3 tbsp water

FOR BATTER:

1 cup APF or Maida

1 tsp baking powder

1/4 tsp nutmeg powder

1/2 tsp cinnamon powder

1/2 cup soft dark brown sugar

150 gms salted butter

3 eggs

1/4 tsp cream of tartar

METHOD:

FOR SOAKING AND ROASTING FRUITS:

Take water in a saucepan. Let it boil. Add tea leaves. Boil for a minute. Strain and soak all the berries, raisins and currants in it. Keep it soaked at room temperature for 24 hours.

Take almonds, hazel nuts, cashews and walnuts in a skillet. Just dry roast them until a nice aroma you can smell.

FOR CARAMEL SYRUP:

Take sugar and 1 tsp of water in a saucepan. Melt sugar and caramalise until golden brown. Immediately add 3 tbsp of water. Keep it aside to cool completely.

FOR THE BATTER:

Firstly strain all the soaked fruits and keep it in a sieve for 2-3 hours.

Preheat oven at 180° c and grease a rectangular plum cake mould.

Sieve APF, spices and baking powder twice.

Separate the egg whites and yolk.

Take the egg whites in a bowl. Beat only until frothy with a hand mixer. Add cream of tartar. Now beat until stiff peaks are formed. Keep it aside.

Now cream the sugar and butter until creamy and smooth… About for a minute. Add egg yolks one at a time and mix well.

Now add caramel syrup. Mix well. Add roasted dry fruits and mix them well too.

Now add apf mix and incorporate all well.

Sprinkle half tsp of apf on strained fruits and just shake them so that they coat all the fruits in the sieve. In this way all the juices excreted by them are soaked up by flour and they don’t sink down while baking.

Add berry mix keeping 2 tbsp aside into the batter and mix all well.

Now it’s the time to fold meringue into the batter. Fold them well in 3-4 batches.

Transfer the batter into the greased mould and sprinkle the remaining berries on the top. Bake for 30 minutes at 160°c and at 150°c for 20 minutes. It may vary according to your oven’s voltage. But try to bake first 30 minutes at 160°c.

If it’s done, the tester or toothpick will come out clean.

Now take the cake out of the oven and cool at room temperature on the wire rack..
