OATS AND PEANUT BUTTER COOKIES

Hi all🙋🏻‍♀️,

Wanted to explore something healthy. Tried some oats cookies with peanut butter this afternoon. No additional regular butter or flour used… Totally gluten free.😃

This recipe yields 15 cookies.

Better to follow up with the recipe:

INGREDIENTS:

3/4 cups rolled oats

1 cup or 250 gms ( can make it 200 gms too ) peanut butter ( i prefer smooth and creamy )

5 tbsp brown sugar ( can add 1 – 2 tbsp more if you want more sweetness )

1/2 tsp baking soda

1/2 tsp baking powder

1/2 tsp cinnamon powder

1/2 tsp coffee powder

Chocolate chips for decorating

METHOD:

Take a bowl and add oats, baking soda, baking powder, cinnamon powder, and coffee powder. Mix all and keep it aside.

Now take a separate bowl and add butter and sugar. Mix them well till incorporated.

Add the oats mix and 3-4 tbsp cold milk and mix them well. Refrigerate for 30 minutes.

Preheat oven for 10 minutes at 180 degree celcius. Spread the parchment paper on 28″ * 24″ baking tray. I baked in 2 batches.

After 30 minutes take the oats mix out of the refrigerator and make balls of even size. Place them on the baking tray.

Take a fork and press them with little pressure. Bake them for 8-10 minutes. Though they will look undercooked but it’s done by now. Take the tray out and cool the cookies on wire rack. Press some chocolate chips when cookies are hot.

Once cooled, store them in an airtight container.

You can store cookies for 15 days at room temperature.
