PEANUT BUTTER COOKIES WITH CHOCOLATE FILLING

My son has pyjama party in school. Baked these cookies for him… Did lil bit decoration for kids to have fun…πŸ˜ƒπŸ˜ƒ

  
INGREDIENTS: 

FOR COOKIES:

80 gms Salted butter

80 gms Creamy Peanut Butter

40 gms Icing Sugar

100 gms All Purpose Flour

FOR DECORATION:

50 gms White Chocolate 

50 gms Dark Chocolate

Sprinklers , Almond Flakes and Hazelnut Flakes

METHOD:

Preheat oven to 160 degree celsius.

  
Take a bowl and add both the butters. Mix well till smooth. Add icing sugar and beat till fluffy. 

  
Add all purpose flour and mix well. 

  
At this stage it looks little paste. But don’t worry. Refrigerate for an hour.

  
Now take the dough out of the refrigerator. Make 12-13 balls. Pat a little. 

  
I baked 6 balls in muffin mould and they took the shape of bowl as you can see in pic.

  
I baked remaining 6 balls on aluminium foil which gets flatten.

Bake them at 160 degree celcius for 8-10 minutes. When done, take them out and let it remain in their same baking moulds for 15 minutes. Transfer them to wire rack and let it cool completely.

Now melt both the chocolates separately in double boiler or microwave at high for a minute.

  
Fill the bowl shaped cookies with white melted chocolate and decorate with some colourful sprinklers.

  
Apply dark melted chocolate on plain cookies and stick some flakes.

Let the chocolate set completely. Transfer them to airtight containers and store them.
