Today I’ll post an itzy bitzy recipe of semolina (suji) cutlets which is very easy to make and quick too if guest are unexpectedly in at your place. I made this yesterday evening for tea party at my place and my friends loved them to eat.

The ingredients mentioned below are anytime available in your pantry.

Below recipe yields about 20 medium sized cutlets.

RECIPE:

INGREDIENTS:

1 cup semolina

paneer of 1 lt milk or 1 cup grated processed cheese

2 cups normal water

5-6 chopped green chillies (as per your taste)

2 tbsp oil

1 tsp each of chilly flakes and oregano

1/2 tsp of black pepper powder

1/2 tsp roasted and coarsely crushed cumin

salt

TO FRY:

4 tsp cornflour

1 cup crushed cornflakes

oil to deep fry

water

METHOD:

Grease a 20″×20″ square tray.

Take semolina in a bowl and add 2 cups of water. Keep it aside for 2 minutes. Strain off the excess water.

Heat a skillet and add oil into it. Once the oil gets heated, add chopped green chillies and saute for 10 seconds.

Add semolina to it. Mix properly until it gives upma type look. Now add mashed paneer, oregano, chilly flakes, cumin, black pepper and salt. Here you can add green peas or roasted and crushed peanuts too. Mix them all on low flame.

Once mixed, transfer them in square greased tray And pat them to even surface. Let it cool and set atleast for 30 minutes at room temperature or for 20 minutes in refrigerator.

By the time add  cornflour and water In a bowl. It should be runny. Take cornflakes in another bowl.

After the raw cutlets are set, cut them in squares. Heat oil in a kadhai. Take one square of cutlet.

Dip it in cornflour mix and roll in cornflakes.

Drop it in hot oil. Fry on medium heat till golden brown in colour. Take them out on tissue to get rid of excess oil. Serve hot with green chutney or mayonnaise or sauce or any dip you have at your home.

They are super crispy…..Can feel the crunch in the above pic😉
