This was in my to do list since longggggg.. I remember 5-6 years. Finally made this as I got pastry sheets and so all the stars stream aligned to indulge myself intošŸ˜.
Baklava is a Turkish delight but now it is available in most parts of our country. I went with the ingredients whatever available in my pantry and as I read below the ingredient list, I am sure you all must be having the same anytime.
The only thing which is hard to find is the phyllo pastry sheets. Though I know to make them still was trying to get it from the store to reduce the workload by 50% straight.
If you are not getting this particular pastry sheetsā€¦ still you can make with spring roll sheets. But in few recipes of this pastry, egg yolks are used.. not in all. If you omit this egg yolk, spring roll sheet is the phyllo pastry sheet.

Below recipe yields 45-48 baklava.

RECIPE:

INGREDIENTS:

FOR ROLLS:
275 gms phyllo sheets
1.5 cups finely chopped pistachios
1 cup almond powderā€¦ you can use cashew powder or any dried nuts powder
2 cup melted ghee or clarified butter.. you can opt for butter too
FOR SUGAR SYRUP:
1 cup granulated sugar
1/2 cup water
1/2 cup honey
1 tsp orange blossom waterā€¦ I opted for a fresh orange juice and 1 tsp orane zest
Juice of 1 lemon
METHOD:
Firstly take a saucepan and add all the ingredients except honey, listed in sugar syrup ingredients. Place the pan on gas stove. Give a boil at high while stirring at intervals. As it give one boil, reduce the flame to minimum and keep boiling for 6-7 minutes more. It should be sticky but no strings should form. Switch off the flame and add honey. Strain and keep it aside.
Preheat oven at 180Ā° c for 10 minutes. Grease your baking tray evenly with some butter or ghee.
Now time to make rolls. Spread your pastry on your clean counter. Apply ghee/butter with a brush all over. Spread nuts powder and chopped pistachios as given in the pic.
Put a straw or anything in straw form and start rolling from your end to the other opposite side. Pull the straw out. Cut the rolls as per your choice. I kept 3ā€ each. Repeat for all.

Place the rolls on greased baking tray and brush the top with butter/ghee. Bake at 180Ā°C for 35-40 minutes.

As you can see the golden colour, take the tray out of the oven and pour the hot sugar syrup all over. Leave it aside and let the rolls absorb syrup for 3-4 hours.
Serve the delicious baklava as it is with some sprinkle nuts, dried rose petals or you can serve with rabdi. Your choice!!!!
