ORANGE CANDIES!!!! Who does not love them?? I think allš. Itās super easy recipe and oranges are available anytime and anywhere nowadays. Try to get best quality of oranges.. I mean to say vibrant orange coloured š.

This recipe is different what I have heard so far till now. Will tell you the stage at which point I marked it differently. It involves 2 stages of cooking. First cooking or boiling is done to remove the bitterness of candies as mostly have experienced š. The second stage is the final cooking of giving glaze and sweetness to them.
For safer side to get escaped from this bitterness, I have scraped the pith out too with an elongated scraper. You can use opposite side of knife or spoon too for this step.
Now the DIFFERENT STAGEšā¦ the second cooking includes sugar and water for coating these candies. Instead of water I have used juice of the same 2 oranges out of which peels have been used to make these candies. Terrific citrusy taste youāll get and level is not only 1 or 2 steps higherā¦ in fact these candies are totally of next level.
This recipe will give you about a cup of candies.
RECIPE:
INGREDIENTS:
2 oranges
3 cups water
Juice of 2 oranges
1/2 cup sugar
METHOD:
Take both the oranges and wash them properly and wipe extra moisture. Mark slits vertically on both and try to peel them in one long piece. This way youāll get long strips of candies.
Now take a scraper type of thing and take out extra white spongy part known as pith which will make your candies bitter. Not required to scrape all. Just run your scraper once. I just tried to make it lesser bitter as much as I can. If you donāt have elongated scraper, just run spoon of opposite side of your knife carefully.
Now slice your peels vertically as you can see in the pic.
Take a saucepan. Add 3 cups of water. When you get rolling boil, add the slices of orange peel. Let it boil for 6-7 minutes at medium high. Strain and wash with normal water to stop cooking Ā at this point because once again you have to cook it.
Now take juice and sugar in the same saucepan and give a boil. Add strained orange peels. Minimise the flame to lowest and let it boil for 18-20 minutes or till they become shiny and translucent.
Hardly 1-2 tsp of thick syrup should be left in your pan as you can see in the pic. Switch off the flame.
As they are very hot, I used my mini pickle picker to lift one at a time and spread them all on cooling wire rack. If wire rack is not available, use any strainer type of thing so that the base should not touch the ground. In this way these peels get dry faster. It took me around 4 hours to get them dried.
Now take sugar powder or castor sugar in a plate and roll these dried candies all around. I played a bitāŗļø. Had orange coloured sugar in my pantry. Used that too. You can experiment as much as you want.
Store them in airtight container and freeze. Now wait for the Christmas Bakesš„°. I am so excited to use this in it and obviously you can use these in any of your dessert, bakes, garnishes, etc.
Remaining sugar syrup is there in your pan. Please donāt throw this. It has thousands of usage in desserts. It has very strong citrusy Ā flavour which is very fantastic and I am going to use it in my mango cheese cake on the top most glaze. Can store in the freezer for 3-4 months to make orange cheese cake, or simple cakes or can use in plum cake during Christmas.
