CARAMEL CROISSANTS PUDDING

My last post was croissants and I discussed about it’pudding to post in my in my next blog. About croissants you know very well…so just have a look in it’pudding recipe. If you have no croissants at home, you can simply try this pudding by replacing bread or leftover pieces of cake.

4 large sized croissants

1 cup sugar

4 tbsp water

1 cup fresh cream (I used homemade)

4 tbsp vanilla extract or essence (I used Monin Vanillae syrup as it was available in my pantry)

1cup whole milk

4 beaten eggs

METHOD:

download (19)Take one saucepan and add sugar and water to it. Let it melt at room temperature. Once melted, place the saucepan on gas stove and on the flame. No need to stir. Just give swirls in between at medium flame.

download (24) Let it cook till caramelisation.

download (20)Now take a cake tin or deep tray and tear off the croissants in small pieces. Arrange it all over the tin.

download (23)Once caramel is ready, switch off the flame and immediately add the cream. Be careful as it will splutter.

download (18) Add essence and milk followed by beaten eggs. Mix them all well.

download (16)Pour the syrup on croissants and dab them so that the liquid gets inside them. Leave the croissants aside for 10 minutes so that croissants absorb some amount of liquid.

By the time, preheat the oven at 180 degree celcius for 10 minutes.

After 10 minutes place the tin in oven and bake for 20 minutes. Insert skewer in middle. It should not be so clean. Little greaseness is fine.

download (15)Once done, transfer the tin on wirerack. Enjoy it warm with some vanilla icecream.

I have used chocolate glazed cherries for garnish.
