I just love this biscuits with tea in the evening. I am not a biscuit person but I am a cookie-woman🤣… especially savoury ones. Tried my hands on these biscuits and voila.. they are completely mindblowing.. try once and I bet… you’ll stop buying from the stores.. until and unless you feel lethargic to make😜… which we do sometimes obviously. Next time going to play with some combination of spices and herbs.
This recipe yields 28 biscuits with 2” of diameter approximately.
RECIPE:
INGREDIENTS:
1 tbsp cumin or jeera seeds of best quality
1/4 cup powdered sugar
100 gms or 1/2 cup salted butter.. softened at room temperature but lil bit hard
1 cup + 2 tbsp APF or refined flour
1/2 tsp salt
METHOD:
First of all dry roast cumin seeds until slightly browned and let it cool. Transfer the seeds on your kitchen counter and coarsely crush.
Now take butter and sugar in a bowl. Initially using the hand mixer or stand mixer, whip both for 30 seconds till mixed well. Now increase the speed by 2-3 levels or at medium and whip till light and fluffy. It takes around 2.5-3 minutes.
Add 3/4 crushed cumin seeds. Mix well. Add flour in 3 portions and just combine well. Don’t knead as gluten should not be released from the flour.
Wrap the dough in a cling film and refrigerate for 30 minutes. I used freezer so it took me 15 minutes approximate to handle them while giving cookie shapes.
After the dough got assembled well, line your baking tray with parchment paper and preheat oven at 180° c for 10 minutes.
Now placing the dough between 2 sheets of parchment paper, roll till 1/2” of thickness. Spread the remaining cumin seeds. Roll the pin over the dough just once so that cumin seeds sticks on the dough nicely. Otherwise they will come out with a slight motion.
Give the shape to your biscuits by cutting them with cookie cutter. Carefully transfer the biscuits on lined tray.. keeping 2” gap between a pair of cookies.
Place the tray on the middle rack of your oven at bake at 180° c for 15-20 minutes. Baking time may vary according to your oven’s power. As soon as you see the golden rims on the side, time to be taken out.
Place the tray on wire rack and let cookies cool completely.
Once they are cooled, transfer them into air tight jar and enjoy during your tea-times.
These are just like store bought ones.. I bet 👍🏻.
