Hi all🙋🏻‍♀️,
How you all are doing?? Hope all are fine at and just praying this time to get over soon..🙏🏻😇.
As things are totally topsy turvy at this point.. still I have noticed that people who used to refrain themselves from making mere tea .. are preparing numerous wonderful dishes at home they are craving for and simultaneously also getting aware of their capacities in kitchen😄.

So I also tried my hands on Kalaakand this time and voila.. it turned out so well… fully succulent just like store bought. In fact better than as you can adjust the sweetness as per your palette.


Kalaakand is actually Indian milk cake but not milk cake. Milk cake are totally dry and solid whereas kalaakand is lil bit juicy.
I flavoured my kalaakand with saffron or kesar but skipping this ingredient will yield normal traditional kalaakand.

Let’s dive into the recipe.

INGREDIENTS:

Paneer of 1.5 ltr full cream milk.. I prepared at home.. it was around 300-350 gms…So if you are using store-bought, can purchase this much.
1.5 ltrs full cream milk
3/4 cup sugar.. you can go by 1/4 more but not more than that.
1/2 tsp green cardamom powder
10-15 strands of saffron strands
Few slivered almonds and pistachios
Few dried rose petals
1/2 sheet of silver varak or leaf
1 tsp ghee for greasing the tray

METHOD:

Take milk in a wide vessel so that condensing happens faster. Put the vessel on gas flame at high. Give a boil and let it condensed till you reach 1/2 ltr.
Add sugar and stir till it dissolves completely.
Add crushed paneer and saffron strands.
Now keep stirring as if you leave it, it might stick at the bottom and total taste and ingredients will go in vain.
So keep stirring until bubbling stops and whole mixture lumps together.
Add cardamom powder and mix well.
Switch off the flame.
Line a rectangular tray with butter paper and grease it with ghee.
Pour the hot mixture onto greased tray and spread varak. Sprinkle all the dried nuts mentioned in the ingredients’ list above.
Keep it in refrigerator for 3/4 hours or overnight.
Cut into cubes and relish😋😋😋😋😋
