Let's surprise our brothers this Rakshabandhan with this special Rakhi cuppies🤗☺️. Tie Rakhi Eat Rakhi🤗.

These are simple eggless vanilla cupcakes with whipped cream icing and topped with fondant Rakhi. Have used both pink and blue icing to essay the bonding of both brother and sister👫.

This time one more special thing I have added. I always replace eggs with yogurt. This time too have used yogurt but instead of 1/2 cup have used 1/4 cup and 1/4 have compensated with buttermilk and that too homemade ☺️. Have omitted oil completely because buttermilk has enough fat for this portion of recipe.

This recipe yield 15 mini cupcakes.

INGREDIENTS:

1/4 cup thick yogurt

1/4 cup buttermilk

1/4 + 2 tbsp granulated sugar.. grinded into powder

1/4 tsp baking soda

3/4 tsp baking powder

2 tbsp milk at room temperature

3/4 tsp vanilla essence

3/4 cup APF or maida

METHOD:

Take curd in a big bowl. Add sugar and mix completely. Add baking powder and baking soda. Stir and mix well. Keep aside for 5 minutes.

By the time preheat oven at 180° c and grease your cupcake liners.

After 5 minutes you can see bubbles in the curd mix and volume has increased into double of its original volume.

Now add milk and essence. Mix well.

Add flour in 2 portions and mix well until you get creamy mixture. But keep in mind not to overmix. Just combine for maximum of 30 seconds.

Fill the greased liners till 3/4 with this batter and bake for 10-12 minutes.

Once the skewer comes out clean from the middle of the cake, take them out and cool on wire rack.

Once cooled completely, do the icing🤗.
