Can you imagine?? Yes I made 125 red velvet cupcakes ☺️. I am not such a professional baker but yes you can say I am a homebaker😍😍. Had a stall in my society so made them including many other sweet stuffs😋😋.
Come on let’s have a look for the recipe which yields 15 big sized cupcakes.
1.5 cups APF OR Maida
3/4 cups granulated sugar.. Measure and then grind it into powder
1 cup thick curd
1.25 tsp baking powder
1/2 tsp baking soda
1/4 cup milk
1 tsp vanilla essence
1/4 cup oil.. Have used canola.. Bt you can use any light and unflavoured oil
Preheat oven at 180° c.
Grease and line the cupcake liners on the baking tray.
Sieve maida twice and keep aside. Mix sugar and curd completely. Add baking powder, baking soda to the creamed mixture and mix well. Leave aside for 5 minutes and you can see the bubbles appearing and the volume gets doubled.
Now add vanilla essence, cooking oil, milk and mix well. Add red gel paste if you wish to make red velvet or continue with the colour of your choice or leave as it is.
Next slowly add maida in portions at a time and blend with wet ingredients. Beat well with a whisk until creamy and thick.
Now transfer the batter into baking moulds and bake for 15 minutes. Once the tester comes out clean from the centre, it’s done.
Take the moulds out and transfer them on the wire rack. Let it cool completely.
Now time to do the icing😄.
Take whipped cream and do the icing as per your choice.
