This cake is made with no such birthday or anniversary reason😛. Just my son wanted to have chocolate cake and I have very little ganache, lil quantity of butter, fresh buttermilk, etc all scattered in my pantry. Hence this cake got its birth unreasonably due to this reason. But mindblowing cake and frosting altogether came out. Of course you can make this on any of your reasoning cause☺️. You’ll just love it😋.
2 cups APF or refined flour
1/2 cup cocoa powder
1 tsp baking powder
3/4 tsp baking soda
2 large eggs
1/2 cup buttermilk
2 tbsp mayonnaise
1+1/2 cup salted butter
1+1/4 cup brown sugar
1/2 cup water
2 tsp coffee powder
200 gms unsalted butter at room temperature but not melted.
1 cup ganache
1/2 cup brown sugar
125 gms chopped dark chocolate
4/5 tbsp water
1/2 cup chocolate sauce
Preheat oven at 180° C for 10 minutes.
Grease 7” round baking cake pans with butter or oil.
Take sieved flour, cocoa powder, baking powder and baking soda in a bowl.
Now take a saucepan and add salted butter, coffee powder, water and brown sugar. Place the saucepan on gas stove. At minimum flame, cook till you get the melted butter and sugar.
Now transfer this hot mixture into the flour mix and incorporate all using hand mixer.
Into this batter, add buttermilk, mayonnaise and eggs one at a time. Mix well all.
Now divide the batter in 2 portions by pouring into your greased cake pans.
Now this was in my to-do-list since long. Have read so much stories about its success of getting levelled cake without any cracks or dome getting on top. Just take a cotton strip and measure according to your cake pan all around. Fold it 2/3 times. Dip the strip in water and squeeze leaving 60% of moisture intact. Wrap around your cake pan and tie with a thin strip…as you can see in the oic above.
In the middle rack of the oven, place the batter pans and bake for 25-30 minutes or until tester come out clean from the centre of the cake.
Cool the cakes by placing the pans on wire rack.
Take sugar, chopped dark chocolate, water and ganache in a saucepan. Cook until you get smooth consistency. Strain and let it cool completely. After cooling place it in refrigerator until chilled.
As your cakes are cooled and ganache is chilled, time to frost the cake.
Take 200 gms unsalted butter in a micing bowl. Whip till it’s light and creamy. Add your chilled ganache mix and incorporate all till combined well.
Take both the cakes and slice each into 2 portions so that you get 4 slices. I used thread method.
Now take your rotator cake stand. Apply some frosting in the middle. Place a slice of cake on it. Pour chocolate sauce all over. Spread your frosting with frosting knife. Repeat till your fourth slice and remaining you can frost on all around sides of your cakes. Set in refrigerator for 7/8 hours.
As the frosting is set by now.. slice your cake with a cleaned knife and enjoy😋.
