There are multiple recipes which I could have tried for this day.. but I dwelled for this only.. Now Really I can’t tell you in words that how these tasted.. I got so nostalgic☺️.. Kolkata’s malaai roll ditto .. don’t believe me?? Then please try and I bet you won’t be able to stop at one.
Description is very well written below.. other than that you have to select really a fresh pack of bread.. otherwise rolling will be a great pain🙃. I tried initially with the stale ones and don’t ask me how I managed.. I had to sprinkle water on bread and then still was unable to roll smooth. Apparently the thing is that bread has to be moist.
Let’s get to the recipe which yields 15 Bread Malaai Rolls.
1 cup milk powder
1/2 cup milk
1 tbsp salted butter or clarified butter/ghee
1.5 tsp saffron infused milk
Chopped nuts.. I used pistachios and almonds.
FOR CONDENSED OR MALAAI MILK:
1.5 ltr full cream milk
1/2 cup sugar.. you can take more 1/4 cup if you have a giant sweet tooth 😛
1/2 tsp cardamom powder.. though I skipped it. I wanted original milk flavour
(What I did.. I took 1 ltr full cream milk and when it reduced to 3/4 ltr… added 200 ml condensed milk.. so no sugar required and you get the condensed consistency in quick)
15 slices of fresh white bread
Mawa prepared from above ingredients
First off all take 10-12 threads of saffron and soak in 3 tbsp of hot milk.
FOR MAWA PASTE:
Take milk, milk powder and any butter you chose in a non stick pan. Stir well. Place the pan on stove at medium heat and keep stirring till you get creamy texture. It takes hardly 6-7 minutes. To check, you can take a small bit and if it rolls between your fingers, it’s done. Add the nuts and saffron-milk. Mix all well and let it cool.
FOR MALAAI MILK:
Take milk in a pan. Let it boil by 1/4 reduction of the total quantity. Add condensed milk and boil till thick. Don’t condense much as you don’t require rabdi. If adding sugar, boil till you get the thick consistency. You have to use this hot.
Take a bread slice. Cut the brown sides. Gently roll especially add more pressure on sides. You can see in the pic.
Now take generous amount of mawa paste and roll.
Here what I did earlier, I spreaded it all over bread like butter. That version I liked more. Anyways.. place the roll at one end of the bread and roll just shown in the picture. Place the roll in a dish. Repeat for all.
Now add hot milk all over. Chill and while serving, embellish as you wish.. hey m so good in rhyming😛.
