Hi allπŸ™‹πŸ»,Many many best wishes of this Christmas month to all of you☺️.Today myself.. CHRISTMAS PUDDING is here to tell you about myself. My culinarian has gone through about 10-12 recipes of mine and finally she compiled all the best out of it.. actually one of her friend just said “once you make any recipe, it becomes yours”.. truly agreeπŸ‘πŸ».

First of all let me clear this that to make me, it requires lots and lots of patience.. It will take 8 hours of final cooking to make me soooo beautiful ☺️😍. But the outcome is outstanding.. not only look wise … infact when you’ll relish me I promise I’ll give you yummiest ecstasy.Now don’t worry for my 8 hours of cooking.. …of course am giving you such a delicious return. Just keep your gas stove at lowest flame and place me into a big vessel with small trivet at my base and fill water till 1/3 from top of my basin dish. That’s it😏..Yesss…. make me 3 weeks in advance of Christmas.. as much as you preserve me, the best out of me you’ll get. Many of you make me a year before and give me booz-feed at every 15 days of interval😜….. and so at that time I get tippled upπŸ€ͺ.One unfortunate thing…. she didn’t get those holly berries and so managed to make some with fondant. Very sorry for her. Lots of effort she put and made me with so much love and care. But it’s ok.. am happy with fondant berries too😍.Come on…. it’s time for the recipe..RECIPE:

INGREDIENTS:

TO SOAK:

1/2 cup of dried mixed berries… like blueberries, gooseberries, blackberries.

2 tbsp sultanas

2 tbsp raisins

1 cup brandy or rum but my cook soaked me in shirazπŸ˜‹.TO DRY ROAST:

1/4 cup each of chopped walnuts, cashews, almonds

FOR THE BATTER:

3/4 cup muscovado sugar… you can opt for demerara too but muscovado will yield intense colour and taste too.

50 gms or 1/4 salted butter at room temperature

1/2 cup marmalade… I was so happy that she used homemade ones

2 eggs

1/3 cup breadcrumbs

3/4 cup APF or refined flour

1 apple… peeled and roughly chopped

50 ml rum or brandy… here again she used shiraz

METHOD:

Soak all the berries, sultanas and raisins in alcohol and keep soaked for 24 hours.

On the next day when you’re ready to make.. dry roast all the dry fruits until you can smell fine nutty essence. Also strain off all your soaked fruits and keep the alcohol to feed me after cooking.

Put a half filled large vessel with wide mouth according to the mouth of the basin on the gas stove at highest flame. The mouth of the vessel should be wide enough to hold the pudding basin. By the time water is getting boiled, grease the basin and prepare my batter.

Grease a transparent basin with capacity of 1.5 ltr (so that you see me for the right judgement of shade you want) with some butter.

Place a rounded foil at the base of the basin.

Now take a big one and deeper bowl.

Add sugar, butter and marmalade. Whip until light and fluffy…. about for 2-3 minutes.

Add one egg at a time and mix only till combined.

Add breadcrumbs and alcohol and mix well.

Now add flour and incorporate well.

Take your mixer out.

Add nuts, berries and chopped apple. Fold well with spatula.

Pour all your thick batter into greased basin and level the top with a spoon.

Cling wrap me well and tie me tightly with a thread.

As the water boils, lower the flame and place a trivet at the bottom of the pan and place the basin on top of the trivet. Cover the vessel with lid. Let me take steam bath. I am tired enough after getting so much whips and folds. Before leaving me add enough water… atleast fill 1/3 from the top of the basin.. yeah I need that😟. Now go wherever you want. I have to stay here for 8 hours at the same lowest flame. My cook went for gym, slept too😒. Her vessel was large enough so she didn’t have to add water later. But you guys please do check in between. I have to be steamed.

8 hrs are over.. yipee.. am ready nowπŸ€“.Now switch off the flame and take me out carefully. Let me cool completely at room temperature.

As I am cooled down, take a fine skewer and make 15-20 holes on me.. oops.. so much pain😣. Now give me something good to feed. Take the reserved alcohol from soaked berries and pour over my holes. Oooolllaaaa .. quenching myself.

Now leave me overnight.

Now it’s time to flame me..take about 1/2 cup of brandy or scotch or rum in a ladle. Heat on a medium flame. After it gets heated… tilt slightly the ladle. You can see lil bit of fire catching the alcohol. Soon fire is all on the top of alcohol. Pour on me quickly. Cheers😎. Ready to be served.

If making me in advance and wants me to be served on Christmas, just re-steam in the same way as you did for 8 hours. But this time only for an hour. Thereafter give me the flame and serve.

Slice and enjoy me with wine, rum sauce, eggnog or whipped cream infused with alcohol.
