DUAL DELIGHT CHOCO-ORANGE CAKE

Hi all🙋🏻,

First time I tried eggless cake without curd😄. Tried that milk and vinegar combi method. Actually it’s nonetheless than buttermilk. Have mentioned in the recipe too.

Result was very spongy and soft .. Nom nom sponge cake.

Actually I made this cake for my inlaws as they are getting back to their native place tomorrow. My father in law loves chocolate flavour and mother in law loves orange flavour. So just combined and made this.

This recipe yields about a kg of cake.

INGREDIENTS:

1+1/2 cup APF or refined flour

1 cup granulated sugar.. Grinded into powder

1/2 tsp baking powder

1/2 tsp baking soda

Pinch of salt

1 cup milk

2 tsp vinegar

1/2 cup refined oil.. Have used canola oil

2 tbsp cocoa powder

1 tsp coffee powder

3 tsp milk

Handful of chopped dates

1/4 cup orange jam or marmalade.. Have used homemade marmalade

Zest of 1 orange

1 drop orange gel paste

METHOD:

Preheat oven at 180° c for 10 minutes.

Grease your cake pan. I have used rectangular cake mould.

Take milk in a bowl. Add vinegar. Let it sit for a minute. Here you can substitute buttermilk with milk and vinegar. Actually milk and vinegar is equal to buttermilk. Use a cup of it.

Sieve APF and baking powder. Add salt and powdered sugar. Mix all well and make a well in the middle.

Add oil into the milk mix. Mix well.

Now add the milk mix into the APF mix.

Combine all well with stand or hand mixer but only for max 30 seconds. More than that will give you bread not cake.

Now take one fourth of the total batter in a separate bowl. Add cocoa powder, coffee powder and milk into the 1/4 portion. Mix well. Spread the batter at the base of the greased tin. Spread chopped dates. Bake for only 5-7 minutes at 180° c.

By the time add zest, marmalade and gel paste to the 3/4 or the remaining batter. Combine all well with spatula using cut and fold method.

Now have a look on the chocolate layer being baked in the oven. You can see a very thin skin has form on the top of the chocolate base.

Transfer the orange flavoured batter from the nearest point onto the chocolate layer. You can see the sides of the chocolate layer will make a wall surrounding orange one.

Transfer the mould into the oven and bake for 40 minutes at 180° c.

I always touch my cake to check whether it has been done or not. Just put your finger on the middle part and press slightly. If it springs back, it’s done. You can do skewer test also. No restriction.

Once done, take the mould out and cool completely before slicing.
