Hi allšŸ™‹šŸ»ā€ā™€ļø,

Was a winter break for mešŸ˜œ??? Actually all the festivals back to back and lots of guests and relativesā€™ meet ups. Pinni was in my list too since longgggg. Itā€™s totally Punjabi delicacy and they make these especially in winters because most of the ingredients especially edible gum used, gives heat to your body. But they or if you go up much more towards northern side, they have their own kind of winter. In Maharashtra or towards south.. we donā€™t feel 10% of it though. Hey but still you can have thisšŸ˜‹.

Was seeing many recipes through scrolling on internet but I have always believed on borrowing recipes from older versions of usā˜ŗļø. Recipe is much intact and retains its origin. Evolution sometimes brings bad revolutions šŸ¤£. So this recipe is borrowed from one of my Punjabi friendsā€™ grandmom.

Few points to be ensured:

You can replace my used seeds and nuts flour with complete or 50:50 wheat flour/millet flour/pearl millet/sattu.. and so on. Combine any two of equal ratios of all or just with a type of any flour.

Honey and jaggery can be replaced by sugar powder. Just take about half of the quantity. As if I have used 1/2 cup honey and 4 cups jaggery powder so go with 2+1/4 cups of sugar powder if moderate sweetness you require. For more, increase by 1/2 cup more powder but more than this will be inedible for me.

You guys can see below the ingredientsā€™ list. One by one you just read and I bet you can feel the good healthšŸ˜œ.

Donā€™t hesitate while using clarified butter. Itā€™s actually a good fat. I do eat ghee lots and lotsā˜ŗļø. If you are being hesitant using Ā this much of ghee, would suggest.. drop the plan of pinni. Always remember.. eat everything but in moderation.

Now letā€™s get into the recipe which will give you 45-50 pinnis.

INGREDIENTS:

3/4 cup almonds

3/4 cup cashews

3/4 cup raisins

3/4 cup pistachios

1/2 cup assorted dried seeds of muskmelon, pumpkin, sesame seeds both Black and white, sunflower, cucumber, flax and watermelon.

3/4 cups dried rose petals

1.5 cups edible gum

3+1/2 cups seeds and dried nuts flour

1.5 cups wheat flour

1 black cardamom

6 green cardamoms

2 cloves

2.5 cups clarified butter or desi ghee

1/2 cup honey

4 cups jaggery powder

METHOD:

Firstly chop all the dried nuts like cashews, pistachios and almonds. I used processor as the quantity was much more. Keep it aside.

Take a deep pan. Add 1/2 cup ghee from the whole as given in ingredientsā€™ list. Add edible gum and deep fry until all puffed up. Take them out.

If required, add 1/2 cup ghee more from the whole quantity and deep fry all the chopped nuts, mixed seeds and raisins. As the smell nutty and lightly golden in colour, transfer them into a plate.

Now time to do some hardworkšŸ’ŖšŸ». Add all the remaining ghee into the same pan. Heat it. Add both the flours. All the ghee will be absorbed initially but later it will start oozing out. It takes time. For me, it took around 45 minutes to sautĆ© till golden brown. But yes, if lesser quantity, it will be ready soon. So by changing the flame from minimum to medium high, sautĆ© your flour till golden brown. As you achieve the result, switch off the flame.

Now grind the fried edible gum, both the cardamoms and cloves into fine powder.

Time to mix dried nuts, fruits, grinded gum, dried rose petals and flour. Now take reat till the flour mux cools down completely.

As now the flour got cooled down completely, add honey and jaggery. Now here no ghee or oil is required to bind the pinnis. Just use your palm and fingers to roll them like I have given the shape. You can make balls too like laddoos.

Now itā€™s ready to eat!!!! A bite of so healthy and nutritious sweet. Sweets can be healthier šŸ’ŖšŸ»šŸ˜.

    hi.. is this “3+1/2 cups seeds and dried nuts flour” really required separate from all the dry fruits, if yes, how to prepare it (proportion etc)

      See you can take 1 cup seeds ā€¦ like mixture of chia, pumpkin and all the healthy seeds you know. Then take 2.5 cups dried nuts flour like of almond, walnut and cashew. Actually I got this mixed flour from Amazon. It was named as keto flour.
