Hi all☺

Especially the PUNEITES😀. The famous SHREWSBURY BISCUIT from KAYANI BAKERY. Everybody in Pune knows about it. It is baked every morning and evening in batches in huge quantity and sold out in jiffy. Heard so much about it…thought to bake them… a small batch☺.

Actually shrewsbury biscuits are also known as ENGLISH BUTTERY COOKIES. These biscuits are made from flour, sugar, eggs, butter and lemon zest. But in KAYANI BAKERY’S SHREWSBURIES, zest is not used. They avoid eggs and sell the vegeterian version of it. Hence I have tried the same one but will soon bake with eggs too and yes will include lemon zest also.

This recipe yields 20 medium sized biscuits.

RECIPE:

INGREDIENTS:

1 cup APF or maida

1 cup milk powder

1/2 cup icing sugar (can make it more according to your taste bud. Maximum 3/4 cup)

200 gms salted butter

1 large egg or 1/4 cup apple juice (I have used Tropicana apple juice)

1 tsp baking powder

METHOD:

Sieve APF, baking powder and milk powder in a bowl. Keep it aside.

Take another bowl. Whisk butter and sugar till pale yellow and fluffy.

Add juice and mix well.

Add APF mix in batches in buttermix. Just mix all. But don’t knead like we do for chapaties. Otherwise all will become puri in oven. Mix all well and make a ball. Refrigerate for 30 minutes. If in rush or can’t wait to bake, just place the dough in freezer for 15 minutes.

Preheat oven at 180 degree celcius line a baking tray of 28″×24″ with butter paper. I used silicone tray so no greasing or butter paper required. Your biscuits will be baked in 2 batches.

Take the dough out from the freezer or refrigerator. Divide into 2 balls. Roll each ball into a big sized thick chapati. Thickness you can see in the pic. Now take any sharp round object or a round cookie cutter and cut rounded biscuits from them. As soon as 9-10 biscuits are ready, place them on lined baking tray at 1″apart.

Make impressions with fork on the sides of cookies.

Place the baking tray on middle rack and bake for 15-20 minutes at 180 d celcius. As soon as the browning effects are visible on biscuits, take them out  and place the tray on wirecrack. Don’t touch them now as they are very soft. Repeat the same for the remaining biscuits. Once cooled, transfer them in airtight containers.
